We have some rare half bottles of Aux Guettes from the great, Pavelot, which is one of the best producers in Savigny-les-Beaune, with complex and beautifully balanced wines that never lose track of their elegance. This wine comes from a 1.48-hectare plot, with 70% planted in 1980 and the remaining 30% in 1999. The vines are planted on shallow limestone soils on a steep south-facing slope forcing the roots to dive deep into the bedrock for water and nutrients. Farming practices here are lutte raisonnee but push towards organic as much as possible. This is 100% destemmed before vinification; this spends 12 months in a barrel, with 25% being new oak. The shallow soils and pure lack of nutrients create naturally low yields, and Aux Guettes sees the lowest yields of all Pavelots vineyards.
John Gilman 93+ points! The 2017 version of aux Guettes from Hugues Pavelot is an utterly classic expression of this fine terroir. The first class bouquet is pure and already impressively complex, delivering scents of black cherries, sweet dark berries, raw cocoa, a lovely mix of spice tones, dark soil elements, a touch of mustard seed and a nicely discreet base of cedary oak. On the palate the wine is pure, full-bodied, refined in profile and beautifully sappy at the core, with excellent complexity, ripe, seamless tannins and lovely backend mineral drive on the focused and perfectly balanced young finish. This is gorgeous wine. (Drink between 2023-2060)"

Vinous (Neal Martin) 91-93 points! "The 2017 Savigny-lès-Beaune Aux Guettes 1er Cru offers more terroir expression and complexity than the Les Serpentières at the moment. This is very detailed, displaying touches of graphite filtering through the black fruit. The palate is very well balanced with a fine line of acidity. A little compact now, but there is a sense of symmetry toward the finish that is compelling. This comes highly recommended."
