Horaisen “Ku” Junmai Daiginjo is produced by Sekiya Brewery, founded in 1864 in the heart of Aichi Prefecture’s Okumikawa region, known for its pristine mountain water and cool climate. The brewery focuses on small-batch, high-precision sake with a deep commitment to rice polishing and in-house koji production. “Ku,” which means “emptiness” or “void,” reflects the brewery’s minimalist, purity-driven philosophy. It is made using Yamadanishiki rice polished to 40%, brewed slowly at low temperatures to preserve finesse and aromatics. Sekiya farms a portion of its own sake rice and sources the rest from top growers in Hyogo, maintaining control over raw material quality. This is a non-vintage release but maintains rigorous consistency through blending and strict quality control. On the palate, Ku is clean and precise, showing elegant notes of melon, white peach, and subtle anise, with a silky texture and a dry, mineral finish.
