We seldomly offer the Champagnes from Bruno Paillard because they are typically hard to find at the right pricing. We were able to source a nice lot of their newly released 2012 Blanc de Blancs Millesime that they don’t produce every year for the last vintage was 2006. This Champagne is sourced from some of the best vineyards in the Cote de Blanc that are all farmed sustainably. This Champagne only comes from the best grape’s free-run juice; a portion is vinified and kept in a tank (80%), and another part is fermented in a barrel (20%), then all is moved to the secondary fermentation in the bottle. The Champagne spent 8 years on the lees, and the dosage is low, coming in at 3 g/l. Very delicate, creamy mousse with citrus, toasted almonds, and a white flower perfume. The finish here keeps trucking gracefully for almost a minute. A refined and elegant wine made the Paillard way that shows off Chardonnay fruit's grace and purity rather than its often-robust character.
