We have special pricing today on the 2017 Pavelot Dominode, a great Burgundy from one of Savigny's benchmark addresses. La Dominode has long been considered one of the appellation’s greatest Premier Cru sites, and Pavelot’s old vines (~80 years old) give the wine excellent depth, structure, and longevity while retaining the finesse that defines the domaine. Jean-Marc and Hugues work traditionally, with hand harvesting, indigenous yeasts, restrained extraction, and careful oak élevage designed to keep the vineyard front and center. The 2017 vintage was especially successful here, producing elegant, perfumed wines with excellent balance and enough structure to age beautifully. Nearly a decade on, this is entering a very attractive drinking window, showing red and dark cherry, dried flowers, spice, earth and mineral notes over fine, resolved tannins. Not surprisingly, this is one of the strongest wines in the Pavelot cellar in 2017. At today’s special pricing, this is an especially compelling way to buy serious, classically styled Premier Cru Burgundy with some bottle age already built in.
John Gilman 94+ The 2017 la Dominode is the most structured young Savigny premier cru in the cellars, but its potential is enormous. The youthful nose was still in the process of absorbing its serving of new oak, but will do so seamlessly with a bit more age, and offers up a fine blend of black plums, red and black cherries, pigeon, dark soil tones, raw cocoa, a bit of bonfire, cedar and an exotic topnote of licorice. On the palate the wine is deep, full-bodied and nicely reserved out of the blocks, with an excellent core of fruit, fine-grained tannins and a long, soil-driven and complex finish. This is serious juice. (Drink between 2026 - 2065)
Burghound 92 pts! Here too a generous dollop of wood frames the very spicy aromas of plum liqueur, dark raspberry and subtle humus and underbrush scents. The sleek and impressively intense medium weight flavors brim with minerality while offering the best complexity and persistence in the range on the balanced, firm and serious finish. This too should amply reward mid to even longer-term cellaring potential. (Drink starting 2027)
