The 2020 Bistrøtage B.20 is one of the most distinctive wines in Charles Dufour’s tiny Champagne portfolio. Bistrøtage comes from four hectares of Pinot Noir in the Vallée de l’Arce in the Aube, planted during the 1970s and 1980s on classic Kimmeridgian soils and farmed organically since 2006. Charles’ mother, Françoise Martinot, owns the vineyards, and they are bottled separately under her name, giving this cuvée its own identity within the Dufour range. B.20 is 100% Pinot Noir from the 2020 harvest, showing the depth and vinosity that make the southern reaches of Champagne so compelling. The wine is fermented with indigenous yeasts and handled with a very light touch in the cellar before extended aging on the lees. The warm 2020 vintage gives the wine impressive generosity, with ripe red and orchard fruit, citrus, gentle spice and subtle toast, while the Kimmeridgian soils bring a firm mineral and saline backbone that keeps everything fresh and precise. Production is extremely small, and Bistrøtage is a fascinating expression of old-vine Pinot Noir from the Aube—vinous and textured enough for the table, but still energetic, dry, and very Champagne.
