Gallois has a tiny production with only 4 hectares of vines spread over Bourgogne, village, premier cru, and grand cru level. While the size of the Domaine may be insignificant, the wines here are masterfully made examples from Gevery-Chambertin.

Gallois practices a sustainable approach to vineyard management to respect the environment. Only in an emergency will they intervene to protect the crop. They also employ leaf thinning and green harvesting to enhance the grapes' quality and limit yields. Fermentation is traditional, with natural yeasts and a maceration period that changes from vintage to vintage, with aging in older French oak barrels.

The Gevrey VV is sourced from 10 different Climats, including En Songe, En Jouise, En Billard, En Dérée, Croix des Champs, Sylvie, La Justice, and Charreux, and two more parcels located right outside their property with the average age of the vines here is over 50 years, giving this wine incredible depth and concentration.
