The 2022 Volpe Pasini Sauvignon "Zuc di Volpe" is the estate's top white wine, produced only in the best vintages from a historic parcel of Sauvignon Blanc located in the heart of Friuli Colli Orientali, near Togliano. Volpe Pasini was founded in 1596 and is one of the region's oldest wineries, renowned for its precision winemaking and commitment to varietal expression—the winery farms 52 hectares, with a focus on white varietals. Under the direction of winemaker Lorenzo Landi and owner Emilio Rotolo, the style is clean, focused, and terroir-driven. The Zuc di Volpe vineyard is situated on marl and sandstone soils at a higher elevation, which promotes slow ripening and preserves acidity. The wine undergoes stainless steel fermentation, with no oak added to maintain purity and aromatic definition.
