Domaine Nathalie & Gilles Fèvre is one of the more exciting under-the-radar addresses in Chablis, backed by generations of history and two winemakers with an intimate understanding of the region, and we have an excellent example of Fourchaume today in half bottles! Gilles comes from the historic Fèvre family, whose roots in Chablis stretch back to at least 1745 and whose great-grandfather Marcel Fèvre helped establish La Chablisienne in 1923. Nathalie spent 12 years as the chief oenologist at La Chablisienne before the couple began vinifying their own domaine wines in 2004. Their Fourchaume is one of the most important wines in the cellar, coming from a substantial 10-hectare holding on the right bank of the Serein, where Chardonnay planted between 1942 and 1989 grows on long, sunrise-facing slopes of classic Kimmeridgian limestone packed with fossilized oyster shells. The wine is fermented and aged entirely in temperature-controlled stainless steel, spending at least 12 months on its fine lees to build texture while preserving the purity and mineral expression of the vineyard. The 2023 is beautifully balanced, with white pear, peach, green apple, and citrus layered with crushed limestone and oyster shell, showing the natural richness for which Fourchaume is known while remaining precise, energetic, and distinctly Chablis. With the pedigree of the Fèvre family, Nathalie’s decades of winemaking experience, and one of the strongest holdings in Fourchaume, this is a terrific Premier Cru Chablis and a fantastic buy in half bottles!

"The 2023 Chablis Fourchaume 1er Cru has an understated nose, yet aeration reveals attractive crushed limestone and oyster shell scents wrapped around Granny Smith and pear aromas. The palate is well balanced with a fine bead of acidity that is necessary because there is real weight and fatness to this Fourchaume. It retains admirable delineation on the finish and lingers nicely in the mouth. Tasted blind at the BIVB offices in Chablis."
