Despite its modest size, Koimari is highly regarded for meticulous brewing and clean, expressive styles rooted in traditional methods. “Saki” is brewed with Saga-produced Yamadanishiki polished to 55%, using soft local water and a slow, cold fermentation to maximize aroma and precision. The brewery emphasizes small-batch production and does not use charcoal filtration, allowing the natural clarity and flavor of the sake to shine. Though not vintage-dated, batch variation is tightly controlled.
