Cuvee Rubis is one of the gems of grower Champagne Rose; it's a magnificent bottle that we cant keep stocked for long. Our shipment just came in, so now is the time to stock up. A Champagne producer for five generations in the Montagne de Reims, few grower Roses are as serious as Vilmarts, and it's a bottle that we, along with our clients, seek out year after year for its outstanding quality. Laurent Champs heads this great address farming with respect for the land with incredible attention to detail in the cellar and is one of the few modern champagne producers only using oak barrels and foudres for fermentation and aging. The absence of Malolactic fermentation adds layers of complexity and creates an outstanding balance, letting the wines age on lees longer. The Rubis is a blend of 90% Pinot Noir, of which 15% is red wine, and 10% premier cru Chardonnay. A beautiful display of Montagne de Reims Pinot Noir's powerful yet elegant expression with a delicacy and freshness gives way to wild red fruits, flowers, and minerals. It is a fantastic Rose Champagne at the top of its class and is highly recommended.
Vinous (Antonio Galloni) 92 points! The NV Cuvée Rubis, Vilmart's non-vintage Rosé, is bright, crisp and airy. Subtle floral-infused aromatics and bright red-toned fruit give the Rubis its understated, gracious personality. White pepper, chalk and floral notes add attractive top notes.
