One of the great bottles of Grower Rose below $100, the Cuvee Rubis from Vilmart has been a long-time favorite, and we have excellent t pricing on this one today. A master class from one of the old growers of Champagne, we have been offering the Vilmart wines for years, with the Rubis being a bottle we offer every disgorgement. These are out last bottles so dont miss them!

We have the new release of the Cuvee Rubis from Vilmart, and this bottling is based on the 2021 vintage. One of the gems of Grower Champagne Rose, Rubis is a magnificent bottle that we offer every release and is typically one of the bar-setting wines for Grower Rose. Vilmart has been producing Champagne for five generations in the Montagne de Reims, and their expertise has led to some serious Champagnes that our clients love.
 Laurent Champs heads this great address farming with respect for the land with incredible attention to detail in the cellar and is one of the few modern Champagne houses only using oak barrels and foudres for fermentation and aging. The absence of Malolactic fermentation adds layers of complexity and creates outstanding energy in the Champagnes, allowing the wines to age on lees longer to build richness but also pair with the oak aging and fermentation very well without becoming too round.
The Rubis is a blend of 90% Pinot Noir, of which 15% is red wine and 10% premier cru Chardonnay. A beautiful display of Montagne de Reims Pinot Noir's powerful yet elegant expression with delicacy and freshness, giving way to very fresh wild red fruits, flowers, spice, and minerals.
2021 in Champagne was just as challenging as it was in Burgundy, and the weather was not on the side of the Vignerons, who had to apply heavy sorting with yields being significantly down from disease and frosts. However, much to the delight of everyone, the healthy was of a surprising quality, saving the vintage and making for some great, limited Champagnes with great acidity and elegance.
We have low pricing on this new release from Vilmart, and it is another fantastic iteration of this much-loved Rose. When looking at Vilmart's track record, this has the potential to be among the best examples.
