Senkin Kakumei Kamosu is an outstanding Sake we just tasted and one of the most intriguing and ambitious new releases from Senkin, the visionary Tochigi brewery led by Masato Usui. Founded in 1806, Senkin has become one of Japan’s most exciting modern sake producers by treating sake with a wine-like sensitivity to place, acidity, and balance, while still grounding its work in historical Japanese brewing traditions. Kakumei Kamosu is built around Senkin’s “Edo-gaeri” philosophy, meaning “returning to Edo,” a concept focused on honoring, preserving, and evolving Edo-period brewing methods through Senkin’s precise, forward-looking approach. This sake uses the Kimoto method, an older and more labor-intensive brewing technique that relies on natural lactic acid development to build depth, structure, and complexity. It also uses the Kijoshu method, a more premium finishing step in the brewing process in which sake is used in place of some of the brewing water, adding richness, texture, and layered sweetness while preserving elegance and balance. Introduced in 2025, Kakumei Kamosu is made with a combination of Kame-no-o and Yamada Nishiki, with Kame-no-o used as the kakemai, and brewed with the same local groundwater that also waters the Rice fields for this Sake in Tochigi prefecture. The class, polishing ratio, yeast, sake meter value, acidity, and amino acid levels are all undisclosed, which adds to the mystery and exclusivity of the release. The finished sake comes in at 15% alcohol and shows a Junmai Daiginjo level of sweetness and a mineral, fruit-driven profile. Compared with more conventional, clean, and linear sake, Kakumei Kamosu is richer, silkier, and more layered, with ripe orchard fruit, banana, cinnamon, subtle grain, gentle sweetness, and a smoky top note with a vinous velvety texture, balanced by Senkin’s signature lift and freshness. It is best served chilled and works beautifully as an aperitif or alongside richer foods, especially prosciutto and pear, blue cheese, roasted duck, and grilled meats. This is a beautifully made, thoughtful, modern interpretation of historic brewing from one of Japan’s most creative producers, and a compelling example of how premium sake can feel both deeply traditional and completely new at the same time.
