Shichiken Yama no Kasumi is a beautiful Sparkling Sake that we love, and we poured it as the starting Sake for a Sake Event we just hosted. We have two sizes of Yama no Kasumi available in stock today, which comes from Yamanashi Meijo Brewery, founded in 1750 in the Yamanashi Prefecture at the foot of Mt. Kaikoma, where pristine water from the Southern Japanese Alps shapes their style. The brewery is operated today by the 12th generation of the Kitahara family, who strive to make traditional Sake with a modern twist. Yama no Kasumi is a naturally carbonated sparkling sake made via in-bottle secondary fermentation (Champagne method), unpasteurized (nama) and partially unfiltered (usunigori), using locally grown rice and highly prized soft mountain water called Hakushu. Being unpasteurized gives this more expression and purity, while partial filtering provides more body and weight to the mid-palate. This exhibits exceptional vibrancy and purity, with a lively, lightly cloudy appearance due to its unfiltered nature and fine bubbles that carry notes of white peach, pineapple, melon, steamed rice, and coconut cream. It is bright, refreshing, and dry on the finish, making it an excellent aperitif or a perfect pairing with light fare, complementing dishes ranging from Caprese to fried shrimp. This is one of our favorites in the category and is excellent in both bottle sizes. We have some of the only bottles currently available in the USA, and it's a fun and unique sake not to miss!
