Tsuchida uses the classic original kimoto method for all of its sake, relying on naturally occurring lactic acid bacteria to start fermentation rather than adding manufactured lactic acid, which gives the Sake more acidity, umami, depth, richness, and character. This Junmai is made from local Gunma rice called Asahi no Yume, polished to 60%, with no added brewer’s alcohol, and shows the house’s signature balance of rice richness, savory complexity, and clean lift. It is fuller and more textured than a simple, easy-drinking sake, with notes of cream, almond, dried fruit, gentle sweetness, and a refreshing, food-friendly finish.
