The wines from Servin are fantastic expressions of Chablis, and this vintage, they are the source for one of the best buys in the category. Domaine Servin is a historic yet under-the-radar estate with roots in Chablis dating back to the 16th century, now led by François Servin, who blends traditional practices with modern precision. The estate farms sustainably and vinifies parcel by parcel, with Montée de Tonnerre typically fermented and aged in a mix of stainless steel and a small proportion of older oak to preserve purity while adding texture. Servins Chablis 1er Cru Montée de Tonnerre comes from vines that are around 60 years old from one of Chablis’ most revered premier cru vineyards, often considered the equal of many Grand Crus due to its Kimmeridgian limestone soils and southwest exposure. 2023 is shaping up to be an outstanding year, marked by moderate warmth and well-timed rainfall, which is yielding vibrant, balanced wines with excellent tension and clarity. This bottling offers classic notes of lemon zest, crushed oyster shell, and white flowers, complemented by brisk acidity and a saline, chalky finish. A benchmark expression of Chablis 1er Cru, this is one par with some of the best of the vintage (Gilman scored the 2023 Raveneau MDT 94+ for perspective), offering both immediate appeal and the structure to improve over the next decade.
John Gilman 94 pts! The 2023 Montée de Tonnerre from Domaine Servin is a simply beautiful young bottle of Chablis! As I have mentioned before, these vines range from thirty-five to more than fifty-five years of age and see no oak during their élevage. The bouquet of the wine is deep, precise and vibrant, wafting from the glass in a blend of fresh lime, pear, wet stone minerality, dried flowers, citrus peel and a touch of anise in the upper register. On the palate the wine is deep, zesty and full-bodied, with an excellent core of fruit, a great spine of acidity, superb mineral drive and cut and a long, complex and impeccably balanced finish. This is an outstanding example of this great premier cru terroir and a stunning value! (Drink between 2025 - 2055)
