There are two versions of Seppou: the White Lable spring-summer release and the Black Label, which is unveiled in winter. Fortunately, we secured some bottles of this rare treat, considering its limited availability.
Seppou's production begins with a meticulous selection of an older variety of rice called Gohyakumangoku, known as the 'Yokozuna of the East', featuring a unique approach polishing a portion to 50% and another to 33%, a practice uncommon in the sake world and distinctive to Seppou. Utilizing the Yamahai fermentation technique, a variant of the Kimoto method, this sake employs wild yeast at low temperatures, ensuring a distinct flavor profile. Following fermentation, it undergoes a "snow aging" process, spending time in a winter snow bunker where it is aged in freezing temperatures. This maintains its freshness and enhances complexity, mouthfeel, and overall smoothness, making it a truly unique experience and a practice that is becoming more common these days. The choice of rice polishing, specifically tailored for snow aging, adds an extra layer of refinement to this bottle.
