Jose Gourmet is the Pinnacle of Ventresca, and we have tried quite a few. This one reminds us of something between the Ramon Pena and Olasagasti with its bolder flavor, silky texture, and sensational mouthwatering richness. This is a delicacy and a true handmade artisanal product that leaves the tongue in a state of astonishment.
Jose Gourmet is a food company specializing in Conservas that we got acquainted with a few years ago. This is a newer name in the category, and the idea here was to revitalize some of the delicacies that were either losing quality or disappearing while also promoting the health benefits of different seafood. Jose Gourmets' appreciation of the classics inspired a team in Portugal to become a key figure in the conserva space tied to tradition but with a modern approach, and they set the bar very high. They reimagined conservas from the ground up, and how modern society and other countries could be drawn in, starting with some of the best packaging we've ever seen, which is fun and inviting. To back this up, only the highest quality of fish is used, ranging from the esoteric to the more common, like this excellent tuna. Jose is merely a source for these local fishermen to sell their excellent catch while also showcasing its deliciousness to the world. The close relationship allows Jose Gourmet to source from the best and be selective, rather than going out and fishing, where what you catch is what you get regardless of quality. Ventresca is the belly cut of the tuna and is the Mediterranean version of Toro. It is a fattier cut that is rich and creamy, almost melting on the tongue, but with such a satisfying texture. There is an excellent depth of flavor between brine and richness; often, we think of tuna as a kind of inert, but the explosion of flavor here is wild. Tuna is also a great source of proteins, lipids, vitamins, and mineral salt and has been a staple in the Mediterranean diet forever. The tuna is preserved in Jose Gourmets' own olive oil that they make and cut into fillets about the size of Sashimi. Enjoy simply with some nice bread and a glass of wine or pasta dishes, though there are a few traditional preparations for the adventurous. Jose Gourmet is about as good as tinned tuna gets and gets our highest recommendation.
