It is our first time offering champagnes from Stephane Regnault, a small producer located in Les Mesnil sur Oger who is doing great things and drawing inspiration from some of the great grower champagne makers. His Champagnes come from three plots, two in Oger and one in the lower part of Mesnil-sur-Oger. All of which have been officially organic since 2020 with a solid lean to Biodynamic preparations to avoid using things like copper and sulfur while creating a thriving environment. Each plot is vinified separately using spontaneous fermentation and since each has its own biodiversity and yeasts on the skins of the grapes, it helps highlight the unique expression of each plot. This is always done in some oak, which brings a lot more aromatic complexity to the finished Champagne. Stephane also allows ample time for the wine to be on the lees with limited sulfur used, preferring to counteract oxidation with techniques like stirring to suspend the lees. Stephan is strongly influenced by Jazz and, specifically, the different modes used for improvisation: Lydian, Mixolydian, and, in this case, Dorian (french spelling is Dorien). This mode of thinking allows him to move with the vintage, and no two bottlings are made the same, choosing to highlight the uniqueness in every bottle.
The Hautes Mottes vineyard, from which the "Dorien" Champagnes are sourced, is just down the road from the famous Les Chetillon vineyard. It is a magnificent grand cru plot for Chardonnay, and the vineyard is nearly pure chalk, making for very exciting wines from one of the greatest Chardonnay terroirs in Champagne. These are very expressive cuvees with beautiful delicateness and elegance while being very complex and having an outstanding sense of place. The Champagnes here are incredibly rare, and we have a limited amount of each, which are the only bottles available in the USA.
