Pierre Baillette's Domaine comprises only three plots in Troits Puits, Rilly de la Montagne, and Verzenay, all classified premier crus based in the Montage de Reims. The Domaine grows three varietals of grapes, Chardonnay, Pinot Noir, and Pinot Meunier, with incredible devotion and respect to the land abstaining from herbicides and pesticides while being certified organic plowed by horse. A sustainable approach to winemaking is always welcome and is one of the calling cards of a great grower; however, the real fun here is that Alexandre Chartogne's wife, Perine Baillette makes these wines. While she is not as widely known as her husband, it's always great to find a wine made by a family member that is on top of their game, and more often than not, they are incredible values. She surely consults with him sometimes, and for this Cuvee, the blend is 100% Chardonnay from the 2018 vintage. It's a fresh and vibrant Champagne with excellent citrus notes, green apples, a lovely floral perfume, and a gorgeous minerality showing. Refreshing and complex Champagne is disgorged with a 2.5 g/l dosage. This is worth a look for Grower Champagne fans; if you love Chatogne's wines, this is a must, and right now, at considerably less money per bottle.
